Blueberry Salsa

INGREDIENTS: 

1 1/2 cups blueberries, divided
1 small jalapeño, seeds and veins removed, chopped
Juice of 1 lime (about 1 Tbs.)
1 Tbs. chopped cilantro
A dash of salt
1 medium tomato (sweet yellow suggested), chopped, divided

DIRECTIONS: 

Place one cup of blueberries, jalapeño, lime juice, cilantro, salt, and half the chopped tomato into a bowl. Mash together lightly or use an immersion blender to blend (but don’t make a paste).  

Stir in remaining blueberries and tomato and serve with tortilla chips.
