1½ oz. vodka
1/2 oz. strawberry-infused Aperol, recipe follows
1/4 oz. fresh lime juice
2 oz. fresh watermelon juice
Soda water
Lime wheel
Flake salt
For the strawberry-infused Aperol:
12 strawberries, tops removed and quartered
1 750 ml. bottle Aperol
Fill a highball or Collins glass with crushed ice, pour in the first four ingredients, and stir. Top with soda water and garnish with a lime wheel and flake salt.
For the strawberry-infused Aperol:
Place both in a large jar or bottle, let steep for 48 hours, then strain. Pour the infused alcohol back into the Aperol bottle. Stored in a cool, dark place, it will last indefinitely.
